Today’s post is a bit of a milestone for me. The last time I wrote a recipe was nearly four years ago. A pandemic, long Covid, an international move and an eating disorder all made me step away from food photography and cooking. But as part of my recovery, my wonderful dietitian encouraged me to get back into recipe creation and food photography. And after four long months of learning how to eat again, here I am with my first new recipe.

This salad is based on a Caesar salad but has, in reality, very little to do with it. The original recipe consists only of romaine lettuce, parmesan cheese, croutons and a dressing. However, that’s not a complete meal, so I added some protein and carbs to make it more filling. You won’t find exact measurements in the ingredient list, but the photos with loose ingredients give you an idea of how much I used.

baby potatoes

  1. If you’re not working with leftovers, cook the raw ingredients: baby potatoes, chicken, bacon and egg.
  2. Chop the lettuce, slice the potatoes, and cut the chicken, bacon and egg into smaller pieces.
  3. Place all ingredients on a plate or in a bowl and mix together.
