Hello, I'm Hester
Between the Dots is a journal dedicated to the quiet beauty found in ordinary moments.
A space where I share sparkles of joy, my adventures far away and nearby, and my answers to tough questions. Welcome. I hope you’ll find yourself at home between these stories of things we tend to overlook.

I have an issue with the online recipe world. Well, not just one, but let’s keep the full discussion for another day. Over the years that I’ve been sharing my recipes, the space has become more and more confusing because of all the food rules people without proper knowledge have created. Don’t misunderstand me, I’m not talking about recipes created with food allergies and intolerances in mind. I mean writing things off as unhealthy for everyone because it doesn’t meet their specific ideas of what a diet should look like.
This attitude has made eating so complicated. And it doesn’t need to be. Not every meal needs to meet every requirement. Not every ingredient needs to be made from scratch. And it’s perfectly ok to throw some things together you already had at home, instead of following an elaborate recipe every single time you have to eat.
Because this is as much a reminder for myself as a thought I wanted to share with you, this non-recipe for simple sandwiches is getting a space in my recipe archive. I hope it serves you well when you need to eat but don’t want to cook.
